I used Make.com for similar needs - their scenario builder handles multi-step workflows well. However, more than 3 app connections gets pricey. For complex logic, sometimes still need to write code snippets, which defeats the no-code promise.
try n8n.io open source option. steep lerning curve but handles nested logic better then zapier. u can selfhost if needed
